Every good recipe starts with an onion. Okay, maybe not chocolate cake. But onions are the foundation of nearly all of the world’s cuisines for a good reason. They are full of aromatic flavor that can be taken in so many different directions depending on how you prepare them: they can be brash and bossy, or tender, mild and sweet, or even sneakily hold up a dish while remaining completely invisible. They are one of the tastiest, most versatile vegetables around.
